Fruit Trees and Berries for the South

As with anything online, you need to parse through the noise to get what you need.
I found a nice growing forum and have gotten a lot of great info, but I also got strange pushback on doing something that isn't according to traditional growing methods. It's not a big deal, I just found it interesting.
I am a backyard grower who doesn't want to spend time on a ladder to protect /harvest my fruit. What is a perfect fruit tree? What nature does on its own? Not for me. A fruit tree leff to its own does not maximize fruit quantity or quality.
I'd rather a small tree I manage with fruit I can get to. I mean how much fruit can I eat anyway?
Make sure the people you ask questions of know their audience.
When we'd harvest, we'd box up some of our harvest and share it with friends and relatives. We'd sometimes mail out several 10s of dozens oranges and grapefruit. Some actually thanked us for the bounty, but no one said 'knock it off', so we guessed we were at least being tolerated. Last harvest was in 2020, though, as the deep freeze of 2021 pretty much wiped us out, in spite of our efforts to cover and heat.
We got some citrus to replace some we've lost. but are having trouble finding suitable places to plant them. I'm wanting to find something on the south side of buildings so the buildings can serve as a wind break, but most of that space is already taken up. That's why I've been entertaining the idea of grafting. We can use root stock that's already well-established.
